  • 2 medium carrots, peeled and chopped
  • 1 frozen banana
  • 1 cup fresh pineapple chunks
  • 1/2 cup mango pieces
  • 1 cup coconut milk
  • 1/2 cup Greek yogurt
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon fresh ginger, grated
  • 1/4 teaspoon cinnamon
  • 1/2 cup ice cubes

  1. Steam the chopped carrots for 3-4 minutes until slightly tender. Let them cool for a minute while you gather remaining ingredients.
  2. Add coconut milk first to the blender, followed by yogurt and steamed carrots. This liquid base prevents the blender from struggling with harder ingredients.
  3. Add frozen banana, pineapple chunks, and mango pieces. Add fresh ginger and cinnamon.
  4. Drizzle honey throughout the mixture, then add ice cubes. Start blending on low speed for 30 seconds, gradually increasing to high speed.
  5. Blend for 60-90 seconds until completely smooth and frothy. The smoothie should pour like thick cream.
  6. Taste and adjust sweetness or thickness as needed. Add more honey for sweetness, coconut milk for thinner consistency, or ice for extra thickness.

Notes

Steam carrots for 3-4 minutes for silky-smooth texture. Pre-chop and freeze carrots in portions for quicker prep. Layer ingredients strategically starting with liquids. Can substitute coconut milk with almond milk, mango with peach, or honey with dates. Refrigerate leftovers up to 24 hours or freeze portions in ice cube trays for up to one month.
