Ingredients
  

For the Marinade
  • 4 chicken breasts or 8 chicken thighs (about 2 lbs)
  • 1/3 cup olive oil
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the BBQ Glaze
  • 1/2 cup BBQ sauce (plus extra for serving)
  • 2 tablespoons honey
  • 1 tablespoon Worcestershire sauce

Method
 

  1. Whisk together olive oil, apple cider vinegar, brown sugar, paprika, garlic powder, onion powder, salt, and pepper in a large bowl until brown sugar is completely dissolved. Place chicken in a resealable bag or shallow dish, pour marinade over, and refrigerate for at least 2 hours.
  2. Combine BBQ sauce, honey, and Worcestershire sauce in a small bowl, stirring until smooth and glossy. Set aside half for basting and reserve the other half for serving.
  3. Heat grill to medium-high heat (around 375-400°F). Clean the grates thoroughly and lightly oil them to prevent sticking. Remove chicken from marinade, letting excess drip off.
  4. Place chicken on the grill and grill for 6-7 minutes per side without moving, allowing grill marks to form. During the last 3-4 minutes of cooking, brush with the BBQ glaze.
  5. Use a meat thermometer to ensure the internal temperature reaches 165°F at the thickest part. The juices should run clear, and the meat should feel firm but springy when pressed.
  6. Remove from grill and let rest for 5 minutes under loose foil to allow juices to redistribute throughout the meat before serving.

Notes

Marinate chicken overnight for deeper flavor. Don't skip marinating time as it's essential for flavor and tenderness. Store leftovers in refrigerator for up to 4 days. Reheat in oven at 350°F rather than microwave for best texture. Apply BBQ glaze only during last few minutes to prevent burning. Plan for about 6oz of chicken per person.
