A homemade version of the classic shake and bake chicken with a crispy seasoned breadcrumb coating that's baked to golden perfection

Ingredients
  

For the Coating Mix
  • 1 cup plain breadcrumbs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
For the Chicken
  • 4-6 pieces chicken pieces (thighs, drumsticks, or breasts)
  • 2 tablespoons olive oil or melted butter

Method
 

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper. In a large zip-top bag or shallow dish, combine all coating ingredients.
  2. Pat your chicken pieces completely dry with paper towels, then brush each piece with olive oil or melted butter.
  3. Place 2-3 chicken pieces at a time into your seasoned breadcrumb mixture. If using a bag, seal tightly and shake vigorously for 30 seconds until each piece is completely coated.
  4. Place coated chicken pieces on your prepared baking sheet, ensuring they don't touch each other.
  5. Bake for 35-40 minutes, depending on the size of your pieces. The chicken is perfectly done when it reaches an internal temperature of 165°F and the coating turns deep golden brown.
  6. Let the chicken rest for 5 minutes before serving to allow juices to redistribute.

Notes

Mix coating blend the night before for time-saving. Pat chicken completely dry before coating for best adhesion. Don't overcrowd baking sheet to ensure crispiness. Store leftovers in refrigerator for up to 3 days. Reheat in 350°F oven for 10-12 minutes to restore crispiness. Avoid microwaving as it makes coating soggy. Can freeze coated uncooked chicken and bake directly from frozen with 5-10 minutes additional cooking time.
