- Preheat your oven to 400°F and line a baking sheet with parchment paper. In a large zip-top bag or shallow dish, combine all coating ingredients.
- Pat your chicken pieces completely dry with paper towels, then brush each piece with olive oil or melted butter.
- Place 2-3 chicken pieces at a time into your seasoned breadcrumb mixture. If using a bag, seal tightly and shake vigorously for 30 seconds until each piece is completely coated.
- Place coated chicken pieces on your prepared baking sheet, ensuring they don't touch each other.
- Bake for 35-40 minutes, depending on the size of your pieces. The chicken is perfectly done when it reaches an internal temperature of 165°F and the coating turns deep golden brown.
- Let the chicken rest for 5 minutes before serving to allow juices to redistribute.
Notes
Mix coating blend the night before for time-saving. Pat chicken completely dry before coating for best adhesion. Don't overcrowd baking sheet to ensure crispiness. Store leftovers in refrigerator for up to 3 days. Reheat in 350°F oven for 10-12 minutes to restore crispiness. Avoid microwaving as it makes coating soggy. Can freeze coated uncooked chicken and bake directly from frozen with 5-10 minutes additional cooking time.
