Honey Butter Glazed Carrots

Ingredients
  

For the Carrots
  • 2 pounds baby carrots (or regular carrots cut into 2-inch pieces)
  • 3 tablespoons unsalted butter
  • 3 tablespoons honey
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves (optional)

Method
 

  1. Wash baby carrots thoroughly under cold water. If using regular carrots, peel and cut them diagonally into 2-inch pieces for even cooking. Pat them completely dry with paper towels.
  2. Heat a large skillet over medium-high heat and add the prepared carrots with 1/4 cup water. Cover and cook for 6-8 minutes until the carrots are tender-crisp when pierced with a fork.
  3. Remove the lid and let any remaining water evaporate completely. Add butter to the pan and let it melt around the carrots. Drizzle in honey and sprinkle brown sugar evenly over the carrots.
  4. Toss the carrots continuously for 3-4 minutes, allowing the honey butter mixture to coat each piece and reduce to a glossy glaze. Season with salt and pepper, tasting and adjusting as needed.
  5. Remove from heat and immediately sprinkle fresh parsley and thyme over the glazed carrots. Give everything a final gentle toss to distribute the herbs evenly and serve.

Notes

Wash and trim carrots the night before for time-saving. Can be made up to 2 hours ahead and gently rewarmed before serving. Store leftovers in refrigerator for up to 4 days. Reheat gently in skillet with splash of water if needed. Avoid freezing as texture becomes soft. Plan for about 1/2 cup per person. Maintain medium heat to prevent burning honey. Ensure carrots are completely dry before cooking for proper caramelization.
