No Yeast Bread

A quick and easy homemade bread that uses baking powder instead of yeast, ready in just 45 minutes from start to finish with a tender, slightly dense texture.

Ingredients
  

For the Bread
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • cups whole milk
  • ¼ cup melted butter
  • 1 large egg

Method
 

  1. Preheat your oven to 375°F (190°C) and grease a 9x5-inch loaf pan thoroughly with butter or cooking spray.
  2. In a large mixing bowl, whisk together flour, baking powder, salt, and sugar until evenly distributed.
  3. In a separate bowl, whisk the egg until smooth, then add milk and melted butter. The butter should be warm but not hot.
  4. Pour the wet ingredients into the dry mixture and stir gently with a wooden spoon or rubber spatula. Mix just until the flour disappears - you'll still see some lumps.
  5. Transfer the batter to your prepared loaf pan, spreading it evenly with a spatula.
  6. Bake for 30-35 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean or with just a few moist crumbs.
  7. Remove from oven and let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely, or slice while still warm.

Notes

Mix dry ingredients the night before to cut prep time in half. Don't overmix the batter - mix just until flour disappears to avoid tough bread. Store at room temperature for up to 3 days, refrigerate for up to one week, or freeze slices individually for up to 3 months. Can substitute whole milk with buttermilk (reduce baking powder to 2 teaspoons), use melted coconut oil instead of butter for dairy-free version, or replace up to 1 cup flour with whole wheat flour.
