Peach Crisp Yogurt

Ingredients
  

  • 1 cup plain Greek yogurt
  • 2 medium peaches, diced (or 1 cup frozen peach slices, thawed)
  • 2 tablespoons honey, divided
  • ½ teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • cup granola
  • 2 tablespoons chopped pecans or walnuts
  • 1 pinch salt

Method
 

  1. Heat a medium skillet over medium heat. Add diced peaches, 1 tablespoon honey, cinnamon, and a pinch of salt. Cook for 3-4 minutes, stirring gently until peaches soften and release their juices. The natural sugars will caramelize slightly, creating a golden syrup. Remove from heat and let cool for 2 minutes.
  2. In a small bowl, combine Greek yogurt with the remaining tablespoon of honey and vanilla extract. Stir until smooth and creamy. The honey should be evenly distributed throughout.
  3. Spoon half the sweetened yogurt into your serving bowl. Add half the warm peach mixture, allowing the juices to swirl into the yogurt. Layer the remaining yogurt on top, then finish with the rest of the peach mixture.
  4. Sprinkle granola and chopped nuts over the top just before serving to preserve their texture and prevent them from becoming soggy.

Notes

Make-ahead tip: Prepare the spiced peach mixture the night before and store in the refrigerator. Don't overcook peaches - they should be tender but hold their shape. Add granola just before serving to maintain crunch. Store assembled bowls for up to 2 days refrigerated, keeping granola separate. Cooked peach mixture keeps 5 days refrigerated. Substitutions: Use coconut yogurt for dairy-free, maple syrup instead of honey, fresh berries can replace peaches.
