Ingredients
  

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk of choice
  • 2 tablespoons natural peanut butter
  • 1 medium ripe banana, mashed
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • Optional toppings: sliced banana, chopped peanuts, drizzle of peanut butter

Method
 

  1. In a mason jar or airtight container, mash half the banana with a fork until mostly smooth, leaving small chunks for texture.
  2. Add peanut butter, milk, maple syrup, vanilla extract, and salt to the mashed banana. Whisk vigorously until the peanut butter dissolves completely and the mixture looks creamy and uniform.
  3. Stir in rolled oats and chia seeds, making sure all oats are submerged in the liquid.
  4. Cover tightly and refrigerate for at least 4 hours, though overnight works best.
  5. Remove from refrigerator and give it a good stir. Top with fresh banana slices, chopped peanuts, or an extra drizzle of peanut butter. Can be eaten cold or warmed in microwave for 30-45 seconds.

Notes

Store covered in refrigerator for up to 4 days. Don't freeze due to banana content. Use old-fashioned rolled oats, not quick oats or steel-cut oats. Can be eaten cold or warmed in microwave for 30-45 seconds. Add fresh toppings each morning rather than storing with oats. Chill time is 4-8 hours minimum.
