- Start by mashing the chopped strawberries in a large pitcher using a muddler or wooden spoon. You want them broken down but still chunky for texture. The natural juices will begin to release, creating a fragrant, sweet base.
- Stir in the sugar until it dissolves completely, then pour in the fresh lemon juice. The sugar helps balance the tartness while the lemon juice brightens the strawberry flavor. Mix thoroughly and let this mixture sit for about 5 minutes to allow the flavors to meld together.
- For a smoother drink, strain the mixture through a fine-mesh sieve, pressing the strawberry pulp to extract maximum flavor. If you prefer a more rustic texture with visible strawberry pieces, skip this step entirely.
- Slowly pour in the cold sparkling water, stirring gently to maintain the carbonation. The key is to add it gradually and avoid vigorous mixing, which can flatten the bubbles.
- Fill glasses with ice and pour the Sparkling Strawberry Lemonade over it. Garnish each glass with fresh strawberry slices and a lemon wedge.
Notes
Prepare the strawberry-lemon base up to 2 days in advance and store in the refrigerator. Add sparkling water just before serving to maintain the fizz. Store leftover base mixture in the refrigerator for up to 3 days. Don't add sparkling water to portions you're saving, as it will go flat. This drink doesn't freeze well due to the carbonation and fruit content. Don't add sparkling water too early or it will lose its fizz. Using warm ingredients will dilute the ice too quickly and create a watery drink.
