Spiced Honey Mustard Grilled Pork Chops

Ingredients
  

  • 4 bone-in pork chops (1-inch thick)
  • 1/4 cup Dijon mustard
  • 3 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

  1. Whisk together Dijon mustard, honey, apple cider vinegar, smoked paprika, garlic powder, onion powder, and cayenne pepper in a medium bowl. The mixture should be smooth and glossy.
  2. Pat pork chops completely dry with paper towels. Season both sides generously with salt and pepper, then brush with olive oil. Let them sit at room temperature for 15 minutes while your grill heats up.
  3. Heat your grill to medium-high heat (around 375-400°F). Clean and oil the grates well to prevent sticking.
  4. Place pork chops on the grill and cook for 4-5 minutes without moving them. Look for nice grill marks before flipping.
  5. Flip the chops and immediately brush the cooked side with half the honey mustard sauce. Grill for another 4-5 minutes.
  6. Brush the second side with remaining sauce during the last minute of cooking. The internal temperature should reach 145°F. Remove from grill and tent with foil for 5 minutes.

Notes

Mix the honey mustard sauce up to 24 hours ahead and marinate the pork chops overnight for deeper flavor. Don't apply sauce too early as it will burn. Never skip the 5-minute resting period. Refrigerate leftovers for up to 3 days or freeze for up to 3 months. Reheat gently in 350°F oven for 10-12 minutes.
