Ingredients
  

For the Protein
  • 1 lb ground beef (85/15 lean)
  • 1 packet taco seasoning (or 2 tbsp homemade blend)
  • ½ cup water
For the Bowls
  • 4 cups romaine lettuce, chopped
  • 1 cup cooked brown rice (or cauliflower rice for low-carb)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 medium avocados, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely diced
  • 1 cup shredded Mexican cheese blend
  • ½ cup sour cream
  • ¼ cup fresh cilantro, chopped

Method
 

  1. Heat a large skillet over medium-high heat and add the ground beef, breaking it up with a wooden spoon. Cook for 5-7 minutes, stirring occasionally, until the meat is browned and no longer pink. Drain any excess fat, then sprinkle in the taco seasoning and water.
  2. Reduce heat to medium-low and let the seasoned beef simmer for 3-4 minutes until the liquid reduces and the mixture becomes slightly saucy. The finished beef should be moist but not watery, with a deep, reddish-brown color from the spices.
  3. In a microwave-safe bowl, combine the black beans and corn with a splash of water. Microwave for 90 seconds until heated through and steaming.
  4. Start with a generous handful of crisp romaine lettuce as your base. Add a scoop of rice to one side, then top with the seasoned beef, warm beans, and corn.
  5. Crown your creation with diced avocado, halved cherry tomatoes, red onion, and shredded cheese. Finish with dollops of sour cream and a sprinkle of fresh cilantro.

Notes

Store components separately in airtight containers for up to 3 days in the refrigerator. Keep seasoned beef and bean mixture together, but store fresh ingredients separately. Reheat beef mixture for 60-90 seconds before assembling. Toss diced avocado with lime juice to prevent browning. Cooked seasoned beef can be frozen for up to 3 months.
